Construction progresses on Park City’s Mammoth Cave Market

Construction is well underway on Mammoth Cave Market, a roughly $6 million commercial development in Park City that officials hope will begin welcoming customers early next year.

Located at 400 Mammoth Cave Parkway, the development is expected to house a gas station, liquor store, coffee shop and restaurant, bringing several new businesses to the community.

“It’s always exciting to see new businesses and opportunities coming to Park City,” Mayor Donna Scavo said.

The project has taken shape in recent months, with much of the building’s exterior structure now standing.

Scavo said the city is hopeful the development will open in early 2027, although a firm opening date has not been established.

Plans for the nearly two-acre property were presented to the Joint City-County Planning Commission in February 2025. Those plans identified Mihir Patel as the property owner and applicant, with Rhodes Engineering and Environmental Services LLC preparing the site plans.

While welcoming the additional investment, Scavo spoke on the importance of balancing economic development with the city’s identity as a small community.

“We want to continue growing and welcoming new investment, but we also want to make sure we preserve that small-town charm that makes Park City special,” she said. “I think projects like Mammoth Cave Market show that we can do both.”
